What is boba?

The Boba culture began in tea-drinking Taiwan in the late '80s and quickly spread across the globe.  At the time, shaved ice and tapioca balls were popular desserts, and of course, tea was a common beverage in the Far East country.     

One hot summer day, a creative Taiwanese food vendor combined the three popular elements into one refreshing beverage—tapioca pearls on the bottom, topped with a layer of shaved ice, and then milk tea to fill the rest of the cup.  Fast forward three decades and boba, also called bubble tea, has evolved into a beverage with an infinite number of flavors.  It still starts with a scoop of pearls at the bottom, but a variety of teas and fruit juices are used, and the signature pearls now come in a variety of flavors and textures, including tapioca, jelly, popping and crunch.   ​

What is Cheese Mousse?

Boba teas can be topped with a sweet whipped topping known as cheese mouse (sometimes called milk foam or cheese foam) made of blended sweet cream cheese, milk and whipping cream. The light topping is often garnished with a dash of sea salt for a sweet and salty profile.   Just think of it as a slightly heavier and more delicious whipped cream.
